3 Fusion Hawker Eats You Need To Try

What makes Singapore unique is our multicultural society with different ethnic groups coming and living together. This inter-mingling of various ethnicities has created fusions through the way we live and also through food! In today’s article, WhyQ will be featuring 3 hawker stalls offering unique fusion eats.

  1. A Noodle Story

A Noodle Story was first started by Gwern Khoo and Ben Tham, who were formerly trainees at SHATEC. Their dishes incorporate both Japanese and Hong Kong(HK) elements into their dishes. Whereas, in terms of their cooking, it is mainly inspired by modern European techniques while infusing Asian flavours. Now, that’s fusion!

Ramen Noodle Bowl ($14) contains HK springy noodles with freshly sliced scallions, plumpy HK-style wonton, and crispy potato-wrapped prawns. It is topped with the most tender cha-su (braised pork belly), that will instantly melt in your mouth like butter. If you enjoy IG-worthy food, get your phones out because you’re in for an experience. Accompanied with every bowl is a hot spring egg cooked to the perfect texture. A texture that produces a lava-like yolk that is sweet yet savoury.

While some may find the fusion between Japanese and Hong Kong cuisine unfamiliar at first, there is always something about it that will draw you back for another bowl. 2. Shiba Roti

If you love wraps or tacos, you’re in for a treat! Started by Justin Tang and Leonard Lim, made a mid-career switch to start Shiba Roti. The wraps base here are not made out of your typical kebab or burrito, but with everyone’s local favourite, roti prata!

If you love a kick of spice, try out the Korean Hot Chicken & Kimchi Wrap ($7.80). Each wrap is served with chicken chunks that were marinated for hours using gochujang (spicy fermented chilli paste). It is further topped with greek yoghurt sauce which adds a hint of citrus and kimchi for the perfect crunch. There are other toppings of apple slaw and pickled vegetables, to add color and freshness to the wrap overall.

They have incorporated other cuisines to their menu including Greek Lemon and Tandoori Chicken. If you’re an adventurous foodie, you have to give their wraps a go! Skip the queue and order yours here!

3. Eddy’s

Finally, we feature Eddy’s which is currently manned by Chef Eddy himself, who wanted to share his passion for culinary through the dishes he serves. Eddy’s menu offers a twist, with flavours from your local and western cuisines, fused.

If you love laksa, give Eddy’s Chicken Chop with Laksa Spaghetti ($13.20) a try! While the laksa gravy is not as rich in coconut milk as our local Laksa, there is still some thickness to the gravy, perfect to go with the spaghetti. This dish is also topped with Hae Bee Hiam (Dried Shrimps Spicy Sambal, which is freshly made from scratch by Chef Eddy. You have to eat it with the Hae Bee Hiam as it helps elevate the flavours of the chicken chop.
